Kabuli Pulao is special occasion food in Afghanistan. “Pulao” is a type of rice dish made with a special, two-stepped cooking process for the rice that is unmatched in yielding separate, fluffy grains with superb texture.Here is our version of Kabuli Pulao (Afghani Pulao) Recipe. Try it and enjoy this very quick, easy and simple.

Ingredients

  • 600g Mutton
  • 4 cup Water
  • Salt As per taste
  • 2 Onion (cube, Slice)
  • 4 Garlic Cloves
  • 1 Carrot
  • 2 TBS Sugar
  • 1 tsp Cardamom Powder
  • 10g Raisins
  • 4 tbsp Cooking Oil
  • 1 tbsp Whole Cumin
  • 4 Green Chili
  • 1 tbsp Garlic (chopped)
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • Half cup Yogurt
  • 2 cups Mutton Stock
  • 700g Rice

Method

  • In a pan, add water (3 cups), mutton, salt, onion cube cutting (half), garlic clove, whole garam masala (5g) and cook until tender. After that remove the foam and separate the mutton stock.
  • In a bowl, add water, Rice and set aside for 20-25 minutes.
  • Now in another pan, add water (1 cup), carrot, sugar, cardamom powder, raisin and cook for 2-3 minutes, then stir it.
  • In another pan, add cooking oil, onion slice cutting (1-1/2), whole cumin, whole garam masala (5g), green chili and fry until light brown.
  • Now, add garlic chopped, cooked mutton, salt, cumin powder, coriander powder, yogurt and cook for 5 minutes.
  • Now, add mutton stock, soaked Guard Rice and cook until water remains in little quantity, then add garnish and simmer for15-20 minutes.
